Pizza Cookies for Parshas Mishpatim



We previously posted the "Kosher Burgers" for Parshas Mishpatim. To fully portray the prohibition of mixing milk and meat, creating these adorable pizza cookies alongside the burgers, will add a next-level dimension!!


What You Will Need:


  • Basic Sugar Cookie dough (recipe below)

  • Red icing (recipe below)

  • Red and green soft candy

  • Shredded coconut



Sugar Cookie Recipe:


  • 2 and 1/4 cups all purpose flour (plus more as needed for rolling)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 3/4 cup margarine, softened

  • 3/4 cup granulated sugar

  • 1 large egg, at room temperature

  • 2 teaspoons pure vanilla extract

  • 1/4 teaspoon almond extract.


Directions:


  1. Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.

  2. In a large bowl, beat the margarine and sugar until smooth and creamy. Add the egg, vanilla, and almond extract

  3. Add the dry ingredients to the wet ingredients and mix until combined. Dough will be relatively soft. If the dough seems too soft and sticky for rolling, add 1 more Tablespoon of flour.

  4. Place the dough in the fridge to chill for at least an hour.

  5. Once chilled, preheat oven to 350°F. Line 2-3 large baking sheets with parchment paper or silicone baking mats.

  6. Carefully remove the dough from the refrigerator, and roll out the dough. Place a large plate over the dough and cut around the plate to create a large circle.



7. Remove the plate and cut eight wedges to resemble a pizza.




8. Remove each slice and place it on the lined baking sheet.





9. Bake for 12 minutes.


10. Prepare the red icing.

Icing Recipe

  • 3 cups of confectioner's sugar

  • Water (we'll be adding tablespoons one a time)

  • Green food coloring

  • Red food coloring

Place the confectioner's sugar in a bowl. Begin with one tablespoon of water. Mix well and slowly add more water, half a spoonful at a time to make sure the icing isn't going to turn too runny. Once the icing is all mixed and at a nice thick consistency, add in the red confectioners' sugar and mix well.




11. Cut the red and green candy into small bits.



12. Spread the red icing neatly on the cookies.



13. Sprinkle some coconut onto the icing layer.



14. Add the candy bits, and you're done!!
