Chanukah Linzer Cookies

My absolute favorite bakery cookies are Linzer cookies! I've tried quite a few recipes, but this recipe beats them all! It literally, melts in your mouth and bursts with flavors. There's almond, lemon, and berry jam exploding on your pallet all at once!


For Chanukah, we used dreidel cookie cutters and created these adorable and scrumptious dreidel Linzer cookies!!


Here's the recipe I used:


12 tablespoons margarine/butter, softened


1/2 cup sugar


grated rind (zest) of 1 lemon


1 large egg yolk


1/2 teaspoon vanilla extract


1/2 teaspoon almond extract


1 1/2 cups flour


3/4 cup almond flour


1/4 teaspoon fine sea salt


Raspberry jam, for filling (My best experience was Tuscanini berry jam)


confectioners' sugar or glazing sugar, for dusting



Directions:


Cream the first 6 ingredients together. Add in the flours and salt. Mix until just combined, but don't over mix.


Refrigerate the dough for an hour. then roll the dough out to 1/8 of an inch, Cut out dreidels with the cookie cutters. In half of the cookies, cut a hole with a smaller circle cookie cutter to create a window.


Bake at 350 for 12-15 min.


Spread jam in between layers, and dust with confectioners' sugar.
